If your desktop is running XP Pro you can use remote desktop. Over a local 10/100 lan it runs pretty fast.
As for an actual hardware solution, haven't got a clue.
Nothing you listed as needing to run is graphically intensive and pretty much any modern card should be able to run 2 displays. FYI you can only run 2 displays total, so if you have 2 external you can't use the internal LCD.

Should support either one. More if the video card can run 2 and high end cards (heck even mid-range cards) shouldn't have any problems. I've run my desktop 7800GTX on dual 1600x1200 monitors.
