GPT was made for EFI. If Apple's EFI is compliant with the standard it will support it fully.
The GPT spec included MBR from the beginning, IIRC, for backwards compatibility. You "should" be able to repartition and format.
I didn't realise the OP wanted to keep OS X. I meant to reformat the whole thing with the OS X install CD and then install windows.

Seriously? Why would you buy a MacBook Pro only to run Windows? Such a waste. Won't the partitioning tool on the Windows install disk get rid of the OS X partition?
