The only cards you can use are the ATI X300, X600, Nvidia 6800 go, 6800 go ultra, 7800 go GTX. There are a few quadro equivalents for the nvidia cards. Anyway, you can't use a 79xx or any 8 series or higher GPU.
I've also heard of the 5300 not working. Definitely give the 4965 a go instead if you are only considering the two. As for win7 support, I imagine it would be supported; its a popular card.

Just because Santa Rosa runs at 800 MHz does not mean it cannot accept a higher fsb cpu. It just means the cpu's fsb will be forced to run at the fsb of the motherboard. This is not recommended though since the voltages may be different.
