OutlookExpress=>Entourage=>new iBook ?

My wife needs to replace her ageing desktop iMac (OS 9.x) with a new iBook. Problem is, she runs Outlook Express as the email client on the iMac and needs access to all her old mail. She would like a new iBook, but we realize that OS X isn't supported by Outlook Express.

How can she import her old email messages to the email client (Mail? Entourage?) available on a new iBook running OS X? We have a USB thumb drive.

And what is the "best" email client for OS X?

Thanks in advance. I am familiar with various Windows OS , but not much good to her with respect to OS X!

I realize this is more software-related than notebook-related, but it's holding up her purchase...

I am not quite sure how to transfer the emails, but if the emails are still on the server, then you can just create the new account on the iBook and it'll download all the emails on the server. Both Mail and Entourage have their benefits, but I am currently using Entourage.
