Which of the ASUS models don't have the glossy screens (like XBrite)??

Just about all "Z" series (a.k.a built on ASUS ) do NOT have a glossy screen... except for the Z63a.

The ensembles that have a matte screen are the V6V and the S5a

I thought the Z71 was a glossy screen?

I believe there's a European version of the Z71V that has a glossy screen, but I don't remember the model name or anything. I think they also have a Z70V with gloss too.
