If you're running CHC 1.9 Beta 02, try going to the Temp tab. Make sure Enable temperature readings is NOT
selected. Having this feature selected interfered with my SpeedFan temperatures. I would see my GPU dropping down to nothing on several occasions. This also seems to correspond to a slight degree of video stutter while playing games. I'm still seeing the stutter, but not to the same extent. My temperature readings on SpeedFan are nice and stable now.
You haven't messed with the ADT7463 at $2E on Intel SMBus PWM 2 mode settings have you? That's the way to manually control the GPU fan on the Z71V if all your sensors are working like they should.
