Whats the difference between the two?

Well....

XP Professional can only run 32 bit programs, whereas the latter can run 32 and 64 bit programs, and so is more future proof. I've heard it can also run some 32 bit programs faster as well, but I'm not sure on that.

Do you need a 64 bit processor for the 64 bit XP Pro?

I heard that. Not too familiar.

Win XP Pro x64 has its pluses and minuses. i just switched my laptop last week from pro to 64 and i have already noticed a few things

1) yes it is actually faster

2) my hibernate doesn't work right for some stupid reason

3) i had issues playing HL2 and CS:S but that was soon fixed (see the XP64 + HL2 = Turbo Button thread)
