Really depends on the kinda games u play. In any of the new FPS games like BF2 or FEAR, u'll see that it make for a lot smoother gamming and faster map loading. But if u intend to play turn based strategy games you dont need the extra RAM.
Now a days 2GB is fast becoming the standard for gaming but Its almost always cheaper to buy the the extra RAM from a 3rd party vendor like newegg and upgrade.

I'd say go for the 2GB from a 3rd party vendor. For example, I ordered my e1705 with 512mb RAM and bought 2GB Memory Pro for around $165. I must say that it greatly enhances the computing experience.
As software becomes more and more bloated, the 2GB will let you stay up to speed without having to spend money to upgrade later.
In short, if you have 1GB right now, stay with it until AMD's AM2 platform and Intel's Santa Rosa platform become popular. Once both major CPU companies are using 667Mhz DDR2 RAM and higher, the price should come down a bit. Then, upgrade to 2GB.

I upgraded my Thinkpad from 768MB to 1024MB. Graphics can use up to 64MB but most of the time (not playing games) it only uses 8MB of RAM. Why did I upgrade? Simple reason: I had the money and wanted to "even" it out.
I bought it at Fry's (a 512MB stick) for like $50. I can't remember the exact price as I think it was in February or somewhere around then.
Did I see a big performance leap? Hell no! Has anything improved since I've upgraded? It seems, IMO, that programs like Photoshop start up a bit faster. Gaming wise, I can't really tell but I don't play demanding games on my Thinkpad.
Was it worth it? Well, you can never have too much memory.
It maxes out at 2GB so I might be doing that soon, but that involves buying two 1GB sticks to replace the already twp 512MB sticks in there.
The biggest improvement I've seen is in the upgrading of my 4200RPM hard drive to a 7200RPM.

If you intend to game a lot its better to get 2GB. Even though 1GB is usually fine you will easily hit past your peak meaning it will use your hard disk to swap more often than necessarily.
With such a high spec gaming notebook 1GB will look small. And definitely as suggested do not upgrade 2GB will Dell. They will rip you off with their upgrades. Get it from newegg.com or something and do it yourself. Its the easiest of upgrades.
