Congrats on the imminent arrival! On the RAM, noldo is right...don't worry about the Latency numbers. This can be important for people doing high performance overclocking, but won't be noticeable on your notebook.
RE matching pairs...yes, that's the ideal, but you can run 2 different sized RAM modules in your system (e.g., if you order just a 1GB stick, you might as well leave one of the 256MB stock sticks in there for a total of 1.25GB). [If anyone has any different views on the issue of matching RAM - please post, as my info is from research and not actual use on a Core 2 Duo system).
