So what do you recommend? Which motherboard, processor, and video cards?

Perhaps I'm simply not understanding the technojargon, or I'm just not looking hard enough, but I can only find 1 motherboard that supports the Core 2 Duo and SLI.

ASUS P5N32-SLI SE Deluxe Socket T (LGA 775) NVIDIA nForce4 SLI X16 ATX Intel Motherboard
Not to hijack, but I am looking at this same Motherboard, and it notes that it is DDR2 667 standard. Does it do me (or the OP) any good to buy DDR2 800? Am I better off waiting till there is an SLI motherboard that is compatible with DDR2 800 or just dropping my RAM down to DDR2 667?

Kickass system:

Case: Antec P180/B Silent case

PSU: Antec NeoHE 550W

Mobo: ASUS P5B Deluxe (for none crossfire)

Mobo: ASUS P5W-DH (Crossfire)

RAM: Corsair XMS2 DDR1066 2GB (no need for 4GB as XP will not see more than 3.2GB)

CPU: Intel Conroe E6600

CPU Cooler: Zalman CNPS-9500 or Scythe Ninja

Optical Drive: Plextor PX-716SA 16x DL SATA DVD Burner (SATA) or
Pioneer DVR-111 (IDE)

Hard Drives: 2x WD Raptor 150GB in RAID 0 and a 750GB Seagate 7200.10 for data
or 1 WD Raptor 150GB as boot and 2 x 320GB Seagate 7200.10 in RAID 0 for data.

Videocard: ATI X1950XTX 512MB (I would not go dual card at this point with DX10 cards so close).

Keyboard: Logitech G15

Mouse: Logitech G7

Monitor: Dell 2407 of Samsung 244T

Speakers: Logitech Z5500 or Z5450.

If you want to play at overclocking, then forget about SLI as none of the SLI mobo overclock well at all. Even the newer nVidia 590 chipset didn't help.

Why? The Z5450 with wireless rear speakers is good for those that didn't want to run speaker wire around the room.

When does the G80 come out and is it worth waiting for that if I'm going to build a system? Will G80 be a DX10 card or no? When can we expect the first DX10 cards? It might make sense to put off building my first until Vista + DX10.
G80 will be dx10, but i wont buy a dx10 card until about 10 months after release. The first batch is going to suck.

Yep, I would get a card that will last you the next 10-12 months and then jump into the second generation DX10.
