sabayon, since it is based on Gentoo might not be a walk in the park to configure for you, since it doesn't have an "all in one" (like Yast or DraxTools) or even a modular configuration program... heavily relies on text file configs. also its currently under some really heavy developemtn so there are still some kinks to iron out.... i assume you're getting the cd version? the dvd comes with everything but the kitchen sink. i think you'd like to play with this distro, but using it long-term will require some work (which you seem to not wanna be able to put in)
knoppix i'll admit that i never actually tried... in a word its just another Debian-clone built around a KDE desktop.... maybe its just me but Kanotix is a better alternative there...though from what i've heard knoppix is a pretty good distro. Note that Knoppix was designed to be a livecd and is not meant to be installed the the hdd (although possible), kanotix was built with being able to install to hd in mind.
as for pclinux os....have you considered perhaps setting it up without a swap?
and honestly, "best distro" you'll never find, you can only create it for yourself, in which case don't be lazy, stop burning 50 cds a week experimenting, and just grab yourself some gentoo and get dirty. or at the very least pick a distro you "sorta like" and tweak it to fit your needs.
