Why do digital cameras all seem to default to .JPG?

Why? WHY!? How can I set them to name files .jpg instead of .JPG? It just bugs me. Everytime I have a new round of photos for my site, I have to go through and manually rename each one. It is bothersome.

If memory serves FAT32, FAT16, and FAT12 were all case insensitive file systems, so there is no difference on them between JPG and jpg.

Since FAT32 is still the most commonly used file system, chances are there is your reason. The fact it gets copied as JPG onto a case sensitive file system has to do with the interface to the FS by the OS more than anything is my understanding.

Have you tried using a renaming tool? Doing them one at a time is not just bothersome...
