What I've have read, some have tried 7200RPM and it has worked. Sony recommends 5400RPM (less heat). The internal cooling (fan) may be enough, but they spec' ed the systems with 5400RPMs (The Cell processor can get pretty warm, especially when Folding).
If you are worried about a performance hit, I don't think it's much difference in the PS3.
Also, the drive needs to be formatted FAT32, the PS3 can't use NTFS. Any thumb drive, memory card or USB external HDD used with it, must be FAT32 also.
