Yes you can use the same layout on the laptops HD as you do on regular PC. Your only constraint is the size of laptop HD.
Also here are some words on FAT vs. NTFS.
Here at work we used to make C: drive FAT drive and the D: drive NTFS. This is because if windows died it was much easier to boot and fix a system file on FAT partition. However, now that there is a way to build a rescue disk based on Windows XP we make both partitions NTFS as it is more efficient and more feautre full than FAT.
Also we generally take 5GB for the C: (system) and the rest of HD for the D: (data). Then Windows goes on C: and any application where you can change the installation path goes to D:.
The 5GB comes from expirience. We started with FAT and it is was 2GB (Limit of a FAT partition) but that was not enough the system drive would run out of space after couple of service packs form MS. Then we switched to 4GB NTFS it was barely enough leaving only 200-300MB free space after a while. After this 5GB NTFS, seems to leave enough free space for us not to worry nor waiste too much of it.
P.S. This is also how I partition HDs on PC for family/relatives when installing XP. Work very well for me.
