I'm in Linux right now so I cannot give you a Windows answer, but the Linux nvidia-settings panel has 4 options:
Default - I think this just uses whatever the bios sets it too which is scaled.
Scaled - scales to take the entire screen. This screws up the aspect ratio so people look short/fat, etc...
Centered - Keeps it at the requested resolution, but centered on the screen. If you set to 800x600, you see it in a small square in the middle of the screen.
Fixed Aspect Ratio Scaled - scales up to use as much as the screen as possible, but keeping the aspect ration. Thus, 1600x1200 ends up with black bars on the sides. This is just like watching "regular" TV on a Widescreen HDTV television.

I played quite a bit of enemy-territory on Linux this weekend. The "scaled" look drove me nuts until I found the Fixed Aspect Ratio setting. Looks great at 1600x1200. Even if I turn on all the anti-aliasing and filters and high textures and stuff, it still runs acceptably well. Coming from the 440go in my Inspiron 8200, this is a HUGE HUGE HUGE improvement. The 440go had to run in a lower resolution, no AA, medium textures, etc....
