If you decide to go that way, and you don't have that much experience, then people here, including myself and Michael, would be glad to help. I'm in the process of buying parts and building a dual Opteron machine.
Good OC basically takes some basic understanding of computer system architecture, and a lot of patience. A very rough outline would be first disable certain power management features which involving CPU clock multiplier adjustement (such as AMD Cool n' Quiet); set the multiplier to a lower value; ramp up the the system base clock (either FSB or HTT base clock; not signal frequency); find a stable point of the base clock by adjusting voltage and RAM timing; and finally re-up the CPU multiplier to the max locked number.
