Here's the laptop I've customized. Anyone who already owns a gateway feel free to speak up about your experience. Otherwise I'd like to hear what you think:

Gateway® M460XL

Processor: Intel® Pentium® M Processor 760 (2 GHz, 533MHz FSB, 2MB L2 Cache) ........ [+US$245.00]

Memory: 1024MB 533MHz DDR2 SDRAM (2-512MB modules) ........ [+US$90.00]

Video: ATI Radeon X600 128MB Graphics I'd especially like to know how this sizes up, and if it can be upgraded after purchasing.

Extended Service Plan Including Limited Warranty: Notebook Total Protection Plan -- 4 year parts/labor/on-site/4 year toll technical support w/ 4 year ADP ........ [+US$389.99] Any positive/negative experience with their support?

Battery: Primary 6-Cell Lithium ion battery with AC pack and 1 yr. limited battery warranty

Additional Battery: Modular 6-Cell Lithium ion battery and 1 yr. limited battery warranty ........ [+US$99.99] Does this make sense, or would I be better off with just a 12-cell? (the additional modular cell fits inside the laptop)

save your money and get the 7510GX I do not think that you need more than that for $ 1249.00 Trust me

Besides battery life(compared to a centrino), everything else on the 7510GX is a plus.

Why don't I see the 7510GX listed at gateway.com?

Because of Intel. Many OEMs are forced by Intel not to sell AMD computers, but some will have a system or 2 available. Gateway does have it listed on their website. Go to the main page, click "View Products at Retail Stores", on the next page click notebooks. The 7510GX should second to last on the list.

Don't worry though. Things will change in a couple of weeks or months.

I'm having trouble with this... I was looking forward to getting a P-M processor because of the 2MB L2 cache and extended battery life, but all the laptops with any reasonable video card are AMD Athlon. How does these two compare?

(2 GHz, 533MHz FSB, 2MB L2 Cache)

They are both up there. The Athlon will have an edge on most situations though(about 5-10% on most cases, more than 15% on some, and equal or slower on some apps that run better on Intel). You will also have the advantage of supporting 64-bit instructions.
