Is FlyaKiteOSX a theme for Windows that makes it look like a mac?

Essentially, yes, but it operates like a native windows theme, so you don't get all the stops and starts from using an ordinary skin. It's also incredibly customisable- you choose exactly what components you want to install or uninstall- you can go for the full mac lookalike experience including the dock- or not. I haven't bothered. The dock is object dock which I've found slow in the past, and i tend to use quick launch anyway. I like the way flyakite turns my active firefox tab blue...

Yep, I'm much like LoopyIT, I use FlyakiteOSX but minus the object dock. Too slow and gimmicky for my liking.

But the rest is quite awesome.

Portable Firefox: firefox that fits on a thumbdrive and leaves no personal info on the computer used.
Portable OpenOffice: Same as above

Actually just check here as there are too many to list.
